One Hour of Service, Days of Preparation

This weekend, I stood back for a moment and watched our team in action.

Guests would soon be sitting down to enjoy a beautifully presented three-course meal, completely unaware of the organised chaos, preparation, and teamwork that had already gone into making that moment possible.

It got me thinking about the blood, sweat and tears that go into that final hour of service.

Yesterday, we catered a three-course meal for 150 guests, all served within a single hour. While the service itself lasted just 60 minutes, the work behind it began days beforehand.

The Work Starts Long Before Guests Arrive

Successful catering isn’t about turning up on the day and starting to cook.

Menus are carefully designed with seasonality, timing, and logistics in mind. Ingredients are sourced, deliveries organised, prep schedules created, and contingency plans put in place. Vegetables are prepped, sauces are made, desserts are assembled, and every element is checked and rechecked before service begins.

By the time guests arrive, hundreds of hours of combined preparation have already gone into creating what they will experience over dinner.

When Service Starts, Every Second Counts

Once service begins, timing becomes everything.

Imagine sending out 150 starters, clearing those plates, preparing and serving 150 mains, and then finishing with 150 desserts — all within an hour.

Every member of the team has a specific role. Chefs focus on cooking and finishing dishes at exactly the right moment. The plating team ensures every plate looks identical. Kitchen porters keep stations clean and organised. Front-of-house staff work closely with the kitchen so food reaches guests quickly and smoothly.

Communication is constant. There is no room for confusion, and every second matters.

The Challenge Nobody Saw

What our guests didn’t know was that, just two hours before service, our freezer failed.

Suddenly, food prepared for the week ahead was at risk.

Within minutes, the team switched into problem-solving mode. Food was moved, vehicles were organised, stock was transported to our other facility, and contingency plans were put into action. Somehow, everyone worked together to solve the problem and still return in time to deliver service as planned.

The guests never knew there had been an issue.

And that’s exactly how it should be.

Why Teamwork Matters

The truth is that I could never achieve something like this alone.

Events of this scale are only possible because of teamwork. Every person, regardless of their role, contributes to the final result. Team members anticipate each other’s needs, communicate constantly, and solve problems under pressure while maintaining the highest standards.

When a team works in harmony, guests see only the finished product: great food, seamless service, and an enjoyable evening.

They don’t see the challenges that were overcome to make it happen.

The Reward

Despite the early starts, long days, and intense pressure, there is nothing more rewarding than watching guests enjoy their meals and create memories around the table.

For us, catering has always been about more than food. It’s about creating an experience and delivering something special.

So, the next time you’re enjoying a catered event, spare a thought for the team behind the scenes. Behind every beautifully plated dish is a group of dedicated professionals who have spent days preparing, planning, adapting, and working together to make it happen.

Because great catering isn’t created in that final hour of service.
